Simple yet delicious and moist gluten-free whole orange cake made with the Free From Fairys wholegrain gluten-free self raising flour blend

Whole Orange & Almond Cake (Gluten-Free)

Gluten-Free, Soya-Free, Low FODMAP (provided you don't eat half the cake in one sitting)

Ingredients
  

  • 1 medium orange - ideally blood orange
  • 175 g butter - softened
  • 175 g light brown sugar - I suggest cutting this to 125g
  • 3 medium free range or organic eggs
  • 175 g Free From Fairy gluten-free self raising flour blend
  • 50 g ground almonds
  • Approx. 5 drops doTerra wild orange essential oil
  • Icing sugar for decoration

Instructions
 

  • Butter and or line the base and sides of a 23cm round, deep cake tin
  • Cut the orange into slices, remove the pips then place everything else in a food processor
  • Whizz the orange until you have a finely chopped puree
  • Add all the remaining ingredients (except the icing sugar) and whizz together until smooth
  • Pour into the prepared tin and smooth the top
  • Bake in a pre-heated oven at 190 degrees C/170 degree fan/gas mark 5 for around 25-30 minutes until risen and firm
