Fruit Cereal Bars; A Healthy Cereal Bar Recipe

With a gluten free cereal base, dates and prunes for sweetness as well as seeds for extra goodness, these fruity cereal bars are a super simple way to get ahead with an easy grab and go breakfast!

Ingredients
  

  • 50 g Stoned, dried dates
  • 50 g Stoned, dried prunes
  • 30 g Water
  • 50 g Virgin coconut oil - I use Coconut Merchant
  • 20 g Molasses
  • 1 tsp Ground cinnamon
  • 100 g Nature's Path Mesa Sunrise
  • 15 g Pumpkin Seeds
  • 15 g Sunflower Seeds

Instructions
 

  • Place the dates and prunes into a small food processor and pulse until a smooth thick paste forms. Add the water to form a smoother paste
  • Add the coconut oil and molasses to the fruit paste and continue to pulse until combined
  • Finally add the cinnamon, Mesa Sunrise, pumpkin and sunflower seeds and pulse again so that some of the Mesa Sunrise flakes are very small while some retain their original size
  • Line a 20cm x 10cm dish with baking paper and then tip the mixture into the dish. Spread with clean fingers and press down
  • Bake in a pre heated oven at 180 degrees C/160 degree fan/Gas Mark 4 for 15 minutes
  •  Allow to cool before cutting into slices and storing in an airtight container
